A well made soup can be a wonderful thing. A heartwarming, medicinal, therapeutic bowl of love. I just adore the way you can cram so much goodness into one bowl of yum.
I tend to make my soups by roasting or simply softening my ingredients in a pan. I use a hand blender to get the right consistency at the end.
I do think soups need good ingredients. If you do one thing, stop buying those pristine vegetables that look amazing and test of, well, nothing! They’re a waste of money and the risk is that they’re also full of bad ass pesticides and gubbins that negates any benefit of eating vegetables.
